Steamed Lapu-lapu (Grouper fish)

INGREDIENTS


  • 1 big lapu-lapu (score at 1 1/2 inch interval) 
  • 1-2 cups leek (sliced)
  • 1 piece of ginger (sliced thinly)
  • 1 bamboo shoot (sliced thinly)
  • 1 tablespoon rice wine
  • 3 dried mushrooms (soaked in 1/2 cup water)
  • 1 tablespoon sesame oil 
  • 3 tablespoon oil 
  • 2 heads garlic (chopped) 
  • 1/2 tablespoon soy sauce
  • Salt and pepper to taste

PROCEDURE

  1. Place leek and slices of ginger on each interval of the fish
  2. Put bamboo shoot around fish
  3. Season with salt and pepper
  4. Place fish in a shallow dish to fit steamer
  5. Sprinkle with rice wine
  6. Top with 3 mushrooms and slice into strips
  7. Steam and cover for 20 minutes until fish flakes easily 
  8. Transfer to platter. Save fish stock and add 1 tablespoon sesame oil. 
In a pan:

  1. Saute 2 heads of chopped garlic
  2. Add 1 stalk thinly sliced leeks
  3. 1/2 tablespoon soy sauce 
  4. Add fish stock mixture
  5. Pour on fish. Serve.
