Steamed Lapu-lapu (Grouper fish)

INGREDIENTS
- 1 big lapu-lapu (score at 1 1/2 inch interval)
- 1-2 cups leek (sliced)
- 1 piece of ginger (sliced thinly)
- 1 bamboo shoot (sliced thinly)
- 1 tablespoon rice wine
- 3 dried mushrooms (soaked in 1/2 cup water)
- 1 tablespoon sesame oil
- 3 tablespoon oil
- 2 heads garlic (chopped)
- 1/2 tablespoon soy sauce
- Salt and pepper to taste
PROCEDURE
- Place leek and slices of ginger on each interval of the fish
- Put bamboo shoot around fish
- Season with salt and pepper
- Place fish in a shallow dish to fit steamer
- Sprinkle with rice wine
- Top with 3 mushrooms and slice into strips
- Steam and cover for 20 minutes until fish flakes easily
- Transfer to platter. Save fish stock and add 1 tablespoon sesame oil.
In a pan:
- Saute 2 heads of chopped garlic
- Add 1 stalk thinly sliced leeks
- 1/2 tablespoon soy sauce
- Add fish stock mixture
- Pour on fish. Serve.
