Chicken Feet

INGREDIENTS
- 1 kilo chicken feet (nails chopped off - make sure to wash and clean thoroughly)
- 1/3 cup oil
- 1 head crushed garlic
- 1 tablespoon ginger
- 1/2 cup chopped leeks
- 2 tablespoons tausi
- 1 tablespoon chili bean sauce
- 1 1/2 tablespoon cornstarch
- 2 tablespoon soy sauce
- 2 tablespoon sugar
- water
PROCEDURE
- Blanch chicken feet in boiling water for 10 minutes. Cool and remove yellow scales.
- Deep fry until golden brown for 7-8 minutes.
- Saute in oil, garlic, ginger, leeks, tausi, chili bean sauce.
- Add chicken feet. Mix and stir well.
- Add soy, sugar and water.
- Place in pressure cooker and cook first for 10 minutes.
- Add 1 1/2 cup water and simmer over low fire for 30 minutes.
- Thicken with 1 1/2 tablespoon cornstarch dispensed in 1 cup water.
- Add few drops of chili oil.
- Serve.
