Leche Flan using whole eggs















This Leche Flan recipe was my grandma's specialty and she always used to make this on big family gatherings.

Egg Mixture

  • 15 pieces eggs
  • 3 cans of evaporated milk
  • 3 cups white sugar
Procedure
  1. Mix eggs, milk and sugar. Stir well until blended. Set aside. 
Syrup
  • 3/4 kilo white sugar
  • 1  1/2 cup water 
Procedure
  1. Put sugar in a pan over low heat. 
  2. When sugar melts, caramelizes and turns golden brown, add water and mix until a little thick. 
  3. Immediately pour into ramekin or llaneras
  4. While still warm, gently pour in egg mixture.
  5. Cover with aluminum foil. Set aside.
  6. Prepare steamer. Let water boil then arrange llaneras with egg mixture. 
  7. Once water boils again, lower fire to medium low heat.
  8.  Cooking time will take 45 minutes to 1 hour.
  9. To test if cooked, insert a toothpick in the middle part of the leche flan. Toothpick must come out clean if done.
