Leche Flan using whole eggs
This Leche Flan recipe was my grandma's specialty and she always used to make this on big family gatherings.

Serves : 15-20
Egg Mixture
- 15 pieces eggs
- 3 cans of evaporated milk
- 3 cups white sugar
Procedure
- Mix eggs, milk and sugar. Stir well until blended. Set aside.
Syrup
- 3/4 kilo white sugar
- 1 1/2 cup water
Procedure
- Put sugar in a pan over low heat.
- When sugar melts, caramelizes and turns golden brown, add water and mix until a little thick.
- Immediately pour into ramekin or llaneras
- While still warm, gently pour in egg mixture.
- Cover with aluminum foil. Set aside.
- Prepare steamer. Let water boil then arrange llaneras with egg mixture.
- Once water boils again, lower fire to medium low heat.
- Cooking time will take 45 minutes to 1 hour.
- To test if cooked, insert a toothpick in the middle part of the leche flan. Toothpick must come out clean if done.
