Mandarin Salad

INGREDIENTS
- 1/4 cup almonds
- 1 tablespoon sugar
- 1/4 head lettuce (torn into bite-size pieces)
- 1/4 bunch romaine (torn into bite-size pieces)
- 2 stalks of celery (chopped)
- 3 green onions (thinly sliced)
- 1 can mandarin orange
DRESSING
- 1/4 cup olive oil
- 2 tablespoon sugar
- 2 tablespoon vinegar
- 1 tablespoon parsley (coarsely chopped)
- 1/2 teaspoon salt
- 1 dash of black pepper
PROCEDURE
- Cook almonds and sugar on low heat. Stir constantly until sugar is melted and almonds are coated.
- Cool and break apart
- Combine lettuce, romaine, celery, onions and mandarin orange.
- Add almonds
- Place in a large bowl. Serve with dressing
