Mandarin Salad

INGREDIENTS
  • 1/4 cup almonds
  • 1 tablespoon sugar
  • 1/4 head lettuce (torn into bite-size pieces)
  • 1/4 bunch romaine (torn into bite-size pieces)
  • 2 stalks of celery (chopped)
  • 3 green onions (thinly sliced)
  • 1 can mandarin orange 

DRESSING
  • 1/4 cup olive oil
  • 2 tablespoon sugar
  • 2 tablespoon vinegar
  • 1 tablespoon parsley (coarsely chopped)
  • 1/2 teaspoon salt
  • 1 dash of black pepper

PROCEDURE
  1. Cook almonds and sugar on low heat. Stir constantly until sugar is melted and almonds are coated. 
  2. Cool and break apart
  3. Combine lettuce, romaine, celery, onions and mandarin orange. 
  4. Add almonds
  5. Place in a large bowl. Serve with dressing
