Brazo de Mercedes

INGREDIENTS

Filling
  • 10 egg yolks
  • 3/4 cup condensed milk
  • 1 teaspoon vanilla
  • 2 tablespoons butter
  • 1/2 cup milk
Procedure
  1. Combine egg yolks and condensed milk. Cook until creamy.
  2. Add in butter and vanilla. Blend .
  3. Set aside. 
Meringue
  • 10 egg whites
  • 1 teaspoon cream of tartar
  • 1 cup sugar
  • 1 teaspoon vanilla 
  • 1/4 cup corn starch
Procedure
  1. Preheat oven to 300 degrees Fahrenheit
  2. Grease jelly roll pan. Wax paper - grease well. 
  3. Blend egg whites with cream of tartar in high speed until bubbles are fine. 
  4. Gradually add sugar. Beat until stiff. 
  5. Fold in cornstarch
  6. Spread into pan evenly.
  7. Bake for 15-20 minutes or until golden brown. 
  8. Take out from oven. Loosen sides - invert on well-greased wax paper.
  9. Spread filling and roll.
  10. Chill and serve.
