Brazo de Mercedes

INGREDIENTS
Filling
- 10 egg yolks
- 3/4 cup condensed milk
- 1 teaspoon vanilla
- 2 tablespoons butter
- 1/2 cup milk
Procedure
- Combine egg yolks and condensed milk. Cook until creamy.
- Add in butter and vanilla. Blend .
- Set aside.
Meringue
- 10 egg whites
- 1 teaspoon cream of tartar
- 1 cup sugar
- 1 teaspoon vanilla
- 1/4 cup corn starch
Procedure
- Preheat oven to 300 degrees Fahrenheit
- Grease jelly roll pan. Wax paper - grease well.
- Blend egg whites with cream of tartar in high speed until bubbles are fine.
- Gradually add sugar. Beat until stiff.
- Fold in cornstarch
- Spread into pan evenly.
- Bake for 15-20 minutes or until golden brown.
- Take out from oven. Loosen sides - invert on well-greased wax paper.
- Spread filling and roll.
- Chill and serve.
